Homemade Tomato Soup

Toss the can of Campbell's,  this soup recipe is the real deal. Savory, bright flavors with a velvety texture. Truly, mmm, mmm good.

Leila’s Homemade Tomato Soup “Bacon Style”

Serves 4-6

Ingredients-

  • Olive oil
  • 1 white onion, diced
  • 1 or 2 cloves of garlic, minced
  • 1 T fresh thyme, minced
  • 
2 or 3 carrots, diced
  • 2 celery stalks, diced
  • (2) 12 oz cans of diced tomatoes
  • 3 cooked slices of bacon (1 for the soup and 2 to garnish),
  • 6 C. Chicken stock
  • 1 bay leaf
  • S/P to taste

Garnish-

  • Fresh Basil
  • a drizzle of heavy cream
  • crispy bacon crumbles, of course

Instructions-

Cook bacon. Set aside. In a large pot, caramelize onion, garlic and thyme with a spot of olive oil. Add carrots and celery sauté a bit. Lightly salt and pepper veggies. Add remaining ingredients and simmer gently until carrots are tender. Process until completely smooth. I use an immersion blender.

Your soup should be thick and amazing. Garnish with basil, bacon crumbles and cracked black pepper.
