2-Minute Vegan Lunch (well, almost)

In the time it might take you to wait in a fast food line you can make this super-fast, fresh, meatless lunch! These wraps are a regular at our house, for dinner too. There are no measurements because this isn't rocket science, people! Make it how YOU like it.

Veggie Wrap

  • 1-3 pieces  soft flatbread or naan, per person (naan is not dairy-free)
  • hummus
  • chopped red bell pepper
  • chopped cucumber
  • chopped tomato
  • chopped avocado
  • chopped fresh basil or cilantro
  • olive oil
  • S&P

Preheat Oven to 400 degrees.

Prep veggies & herbs.

Heat the flat bread in the oven for 1-2 minutes.

Spread with hummus, pile on veggies, drizzle with olive oil, S&P, sprinkle with herbs, wrap it up and devour while it's warm! 

If you're in the mood for cheese, this recipe is delicious with feta. Most of the time I only include 2 veggies, like red bell pepper and cucumber, because it's simpler.
