Basic Herbed Lentils

Lentils are seriously good for you! Oh, let me count the ways...They're high in B Vitamins, Iron and protein. Did I mention FIBER?+ simple, easy and CHEAP. One pound of lentils costs about $1 (at least in my neck of the woods). This recipe makes thick lentils. You can also make them slightly more brothy, wich is excellent over rice. If you're husband "needs" meat to feel that he ate, add a  few slices of chopped bacon and call it "Bacon Lentils" I probably said too much :)

Ingredients:

  • 1 lb dried green lentils
  • 1 onion, diced small
  • 2 cloves garlic, minced
  • 1 C. carrot, peeled and diced small
  • 1 C. celery, diced small
  • 1/2 Tbs fresh thyme, minced
  • 6 C. Chicken or Veggie Broth for thick lentils, 8 C. for brothier
  • 1 1/2Tbs fresh parsley, chopped (reserve some to garnish)
  • Salt & Pepper

Instructions:

In a big pot, on medium heat, in a little olive oil saute the onion, garlic and thyme. When it's good and golden add the carrots and celery, cook the veggies a bit. Now, add lentils, salt and pepper and broth.

If you're making white rice to go with it, this would be a good time to start it. If you're making brown rice you should have started it like 20 minutes ago ;)

Bring the lentils to a slight boil, then lower heat, cover and simmer about 30 minutes. Stir occasionally.  When the lentils are about finished throw in the parsley. You'll know the lentils are ready when they're soft and tender with no "bite."

Serve over rice or with a big salad or both.
