Lemony, Tuna Salad with White Beans

I got the idea to put white beans in my tuna salad when I saw this recipe. Try it, it's so good! I love easy, no-cook meals when it's hot out. DSC_0268

  • (2) 5 oz cans tuna in olive oil, drained (but not squeezed to death)
  • 1 C cooked or canned navy beans, rinsed and drained well
  • 1/4 C red onion, finely diced
  • 2 T fresh dill, chopped (or fresh parsley, minced)
  • 1 T dijon
  • 2-3 T fresh lemon juice
  • pepper
  • field greens (to serve)

*If you're using tuna packed in water, I would suggest drizzling a little olive oil over the salad.

Gently mix all of the ingredients in a bowl and serve on a bed of greens. So simple. Serves 2-4
