
So, I’ve been pretty lazy about cooking since school started back (home school).

This week I couldn’t even muster the energy to write a grocery list, so I had my kids do it. The list came out pretty “carby.”
If these kids didn’t have a mother I’m sure they would live happily on cereal and mac & cheese.
Gabe, my youngest, surprised me by asking me to make Turkey legs. He’s only had turkey legs at Disney and I was up for the challenge!

The meal turned out really fun! Five year olds are so smart!
I brined the turkey first because it makes the meat more tender and flavorful.
Roasted Turkey Legs
Serves 6
Ingredients-
Brine-
- 6 Turkey Legs (or 1 per person)
- 1 Cup salt
- 4 Bay leaves
- A few peppercorns
Season-
- 1T. Paprika
- 1 T Onion powder
- 1 T Celery seeds
- 1 T Salt
- 1/2 tsp. Black pepper
- 1/2 Stick of butter, softened (4 oz)
Prepare-
In the morning, dissolve salt in a quart of hot water. Stir. Pour in a large container or pot and add 3 more quarts cold water. Add turkey legs, bay leaves and peppercorns to the brine. Cover and refrigerate (4-12 hrs).
Mix dry seasonings in a bowl.
Preheat the oven 350 degrees. Remove legs from the brine and pat dry. Rub them with softened butter and the seasonings. In a shallow roasting pan, roast for about an 1 1/2 hrs. or until internal temperature reaches 175 degrees. Turn once during cooking.
