
I know my chili's ugly. It's so ugly, it's chili that only a mother could love. It's more of a Miss Congeniality than a Miss Photogenic. Before you start making ugly jokes, may I defend my baby by saying that it's a mild creamy-white chili with a comforting flavor. It's tasty!!
A fast, one-pot meal for any lazy busy mom. Making it, is as easy as picking up a rotisserie chicken at the market and throwing some ingredients on the stove!
Let me know what you think. But please, don't call it mean names or talk behind it's back. It has low self esteem.
Ugly Creamy, White Chicken Chili
Serves 4
INGREDIENTS-
- 1 Rotisserie chicken
- 1 White onion
- 3 Cloves garlic, sliced
- 4 T. Butter
- 1 T Ground Cumin
- Corn from 2 cobs (1 & 1/2 C.)
- 1 15.5 oz. Can White Kidney Beans (with liquid)
- 4 oz. Can diced green chilies (with liquid)
- 2 C. Chicken broth
- 4 T. Sour cream
- Salt & White pepper, to taste
Topping Ideas-
- Shredded Montery jack cheese (a must!)
- Fresh Cilantro, chopped
- Fresh tomato, diced
- Tortilla chips, broken
PREPARATION-
Remove the meat from the chicken and shred it (I hate this part). Discard skin, fat and bones. I like using a cold rotisserie chicken, it's easier (less gross).
In a large pot, on medium heat, sauté onion, garlic and cumin in butter. Stir in fresh corn. Stir in shredded chicken. Stir in beans, chilies and broth. Bring to a simmer for a few. At the end, stir in sour cream. Salt and pepper to taste.
Dinner's ready! Garnish accordingly.
