Pig nectar is what sets this popcorn apart from the others and by “Pig Nectar” you KNOW that I mean bacon grease! This recipe makes a BIG batch of subtly-smoky, bacon flavored popcorn. It’s pretty dern good.
Peppered, Bacon Popcorn
- 1 Cup Corn Kernels
- 2 T Bacon Drippings & 1/4 C
- 1 tsp Kosher Salt (That’s the kosher part)
- 1/4 tsp Black Pepper
In a big pot (6 Qt), on medium heat, add 2T bacon drippings and a few corn kernels and cover with lid.
After the first kernel pops, the temperature is ready to add all of your corn, salt & pepper. Put the lid back on, but allow a little room for the steam to escape. Shimmy the pot back-and-forth so that the kernels cook evenly. Shake, shake, shake señora!
Remove the pot from the heat when there are a couple seconds between pops.
Toss in the remaining pig nectar. Now taste. You’ll probably want to add more salt and pepper. The flavor gets better as it sits.
