Take a break from meat and dairy and enjoy this rich tasting soup. Serve it with olive oil crostinis and big salad.
Leila's Homemade Tomato Soup
- olive oil
- 1 white onion, diced
- 1 or 2 cloves of garlic, minced
- 1 T fresh thyme, minced
- 2 or 3 carrots, diced
- 2 celery stalks, diced
- (2) 12 oz cans of diced tomatoes
- 6 C. vegetable broth
- 1 bay leaf
- S/P to taste
- garnish with fresh herbs- fresh basil, minced parsley or chives
In a large pot, caramelize onion, garlic and thyme with a spot of olive oil. Add carrots and celery sauté a bit. Lightly salt and pepper veggies. Add remaining ingredients and simmer gently until carrots are tender. Process until completely smooth. I use an immersion blender.
Your soup should be thick and amazing. Garnish with herbs and black pepper. Easy right?
