True story y'all, my mom called me and she’s like, “Leila, Randy Travis is coming for breakfast tomorrow. What should I make?” and I’m like, “How about Leila’s amazingly- fresh breakfast tacos?” She made them and they were a HUGE hit and that is why I’m sharing them with you today. Why these breakfast tacos? Buttery corn tortillas, with soft eggs (amazing), with salty, crispy bacon, with sweet onions with creamy avocado, with bright, tangy tomatoes, with a little heat & crunch from fresh jalapenos and a dollop of sour cream. That’s why. I'm annoying.
Ingredients- 12 eggs 1 lb. bacon 1 white onion, diced butter 1 avocado 1 C. grape or cherry tomatoes, quartered lengthwise 1/4 C. fresh cilantro, minced 8 oz sour cream 1 jalapeno, cut down the length of the pepper to make circles (most people will omit the pepper but I think it makes it!) 12-18 corn tortillas
Detailed Instructions (a little too detailed)- To start, caramelize the onion in a little butter, on medium. The onion should be cooked down and golden, light brown (add a little more butter if it starts to dry out).
At the same time, in another pan, cook bacon also on medium heat. The bacon should be crispy. Don’t over crowd your bacon. Cook it slowly, in nice flat strips so that you don’t end up with tangled bacon. While those are cooking prep your veggies. Lightly salt the onions. Set the bacon & onion aside when they’re done.
The veggies are prepped, now it’s time to make soft, fluffy scrambled eggs. Crack your eggs in a large bowl and whisk for a bit. There’s no need to add anything to them. Your done whisking when the eggs are one color and little bubbles form. Add a little butter to a clean pan on medium-low. “Slow and low” is my method, nobody wants dried out eggs. When the butter has melted add the eggs. With a spatula, scrape the bottom of the pan gently, from one side to the next. This turns them. Soft scramble egg clouds should begin to form. Repeat this until they are almost done but still a little wet. Salt & pepper set aside and cover. While you are prepping the tortillas the eggs will have time to cook on their own.
You’re almost done, I promise. Clean your bacon pan and use it to heat the tortillas. On medium heat, melt butter and heat 2-3 tortillas at a time, flip when necessary. The tortillas should be golden and still soft (I like golden food, OK?). Assemble your tacos how you like them & enjoy!
