It's late at night (11 O'clock), I'm hungry and alone...I want guacamole because it's the best thing on earth but I don't want the whole production or the waste. You know, cutting an entire onion, jalapeño and lime simply to make guacamole for one? No, thanks. I need a pared down version, so I proceed to make amazing guacamole the fast and sparing way, with ingredients that I always have on hand.
You may note, that if guacamole kept well in the fridge, I would make a gallon at a time and there would be no need for this recipe. But it doesn't, so here you go...
Guacamole for One
- 1 perfectly ripe avocado
- the white end of one scallion + some green part too, chopped
- a pinch of fresh cilantro leaves, chopped
- a squirt of Sriracha (to taste)
- a couple dashes of ground cumin
- a pinch of salt
In a little bowl, mash up the ingredients, duh.
Now you can have fresh guacamole every night before bed! Just like me. Night, night xo
