Tomato Soup {Vegan}

Take a break from meat and dairy and enjoy this rich tasting soup. Serve it with olive oil crostinis and big salad.

Leila's Homemade Tomato Soup

Ingredients-

  • olive oil
  • 1 white onion, diced
  • 
1 or 2 cloves of garlic, minced
  • 1 T fresh thyme, minced
  • 
2 or 3 carrots, diced
  • 2 celery stalks, diced
  • 
(2) 12 oz cans of diced tomatoes
  • 6 C. vegetable broth
  • 1 bay leaf
  • 
S/P to taste
  • garnish with fresh herbs- fresh basil, minced parsley or chives

Instructions-

In a large pot, caramelize onion, garlic and thyme with a spot of olive oil. Add carrots and celery sauté a bit. Lightly salt and pepper veggies. Add remaining ingredients and simmer gently until carrots are tender. Process until completely smooth. I use an immersion blender.

Your soup should be thick and amazing. Garnish with herbs and black pepper. Easy right?

{Moroccan Pesto}

Leila’s Harissa

Use this exciting, green  sauce as a marinade for meats, spread on wraps, use as a dip with hummus and naan or drizzle on meat or fish as you would chimichurri. The flavors are amazing!!

  • 1/2 fresh jalapeno, seeded (add the whole pepper if you want more heat)
  • 1 small garlic clove
  • 1/2 c fresh cilantro
  • 1/2 c fresh mint
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp salt
  • olive oil (eyeball it)

Puree all ingredients in a food processor to make a fresh sauce!
